If you tell me I can make an incredibly delicious peach cake with 3 ingredients, I’m all for it! This is the most versatile dessert recipe I’ve created. Whether you use fresh fruit, or canned (I used canned in the recipe), it’s a winner every time! You can adjust this to your preferences, say if you want to try using cherries, or pineapple, those would be lovely! Feel free to use this method as your base to fit your life. Here’s what you’ll need:
1 15oz can of peaches in juice
- (If you’re using fresh fruit, use 2 cups and sprinkle some sugar over the fruit to form a syrup. Let sit for 20 minutes)
1 box of yellow cake mix
1 1/2 – 2 sticks of unsalted butter (I never said this was a healthy cake)
Preheat your oven to 350 degrees.
Place your can of fruit into a 9 x 4 inch pan so that it is all in one even layer. Mine measures about 2 inches deep but use whatever you have at home. Next pour your yellow cake mix all over the fruit in an even layer. Finally, place hefty teaspoons of butter all over the surface of the cake mix being sure to cover it completely. You’re done!
Bake for 55-60 minutes and let cool on a wire rack. Serve warm with your choice of whipped cream or vanilla ice cream.
